Should I tip on the pre-tax or post-tax amount?

Etiquette says tip on the pre-tax subtotal, since you're tipping for service, not the government's cut. In practice, most people tip on the total (post-tax) because it's easier to read off the receipt. The difference on a $50 meal at 8% tax is only $1 ($10 pre-tax vs $10.80 post-tax).

Is tipping increasing at restaurants?

Yes. Average US restaurant tips increased from 17% in 2019 to around 19.5% in 2022–2023. Point-of-sale tablet prompts suggesting 20–25–30% as default options have normalized higher tips. Some restaurants now add automatic service charges (18–20%) for all tables, especially in cities with high minimum wages.
