Video files contain separate audio and video streams. Extracting the audio stream and encoding it as MP3 removes the video data, producing a smaller file that plays in any audio player or music app.
If the source video uses AAC or Opus audio and you transcode to MP3, there is generational quality loss (lossy-to-lossy conversion). To avoid this, export at the highest feasible bitrate. If the source audio is already MP3, try to extract without re-encoding. The perceptible quality difference at 192 kbps+ is minimal for most listeners.
